Quintessa General Manager, Rodrigo Soto, Hosts Four-Course Pairing Dinner with Dishes by Creative Culinary Director Frank Anderson and Chef de Cuisine Francisco Pomalaza

WHAT:    Council Oak Steaks & Seafood, located at Seminole Hard Rock Hotel & Casino Tampa, will welcome Quintessa general manager Rodrigo Soto to host the February wine-pairing dinner on Wednesday, Feb. 20.  Dishes will be paired with Quintessa wines, with additional wine selections by the Huneeus family portfolio including Flowers and Benton-Lane from Oregon’s Willamette Valley.

The dinner will consist of four courses, plus an intermezzo, accompanied by wine pairings. Executive Chef Frank Anderson and Chef de Cuisine Francisco Pomalaza will tempt palates with New American preparations featuring prime beef and top-quality seafood. At the reception, which begins at 6:30 p.m., the hors d’oeuvres are Serrano Ham & Compressed Watermelon served with Honeycomb and Sambal Powder, paired with Benton-Lane’s 2016 Rose of Pinot Noir. Once seated, guests will enjoy a first course of Rose-Poached Hosui Pear with Humboldt Fog cheese and Prickly Pear Vinaigrette, paired with Flowers’ 2017 Rose of Pinot Noir. The second course will feature Duck Rillettes served with House-Made Toast and Raspberry Marmalade, paired with Illumination’s 2017 Sauvignon Blanc. For the Intermezzo, guests will cleanse their palates on a Botanical Green Tea Elixir in preparation for the rest of the meal. The third course, paired with Flowers’ 2016 Chardonnay, is a Fingerling-Crusted Halibut served with Piquillo Pepper Vinaigrette and Potato Tuile. Dinner ends with Prime Short Rib Wellington prepared with Prosciutto, Wild Mushrooms and Bone Marrow Jus de Viande, paired with Quintessa’s 2015 Red Blend.

The ticketed dinner is priced at $150 per person (tax and gratuity included). Guests must be at least 21 years old to consume alcohol at the event.
